- 1 diente ajo
- 1/2 cebolla
- Salsa alemana a base de salsa velouté
- 250 ml fondo de ave
- 50 gr harina
- 50 gr mantequilla
- c/n pimienta
- c/n sal
- c/n gotas de limón
- 2 yemas de huevo
- 1 diente ajo
- 10 ml aceite de oliva
- c/n perejil
- 10 ml aceite de oliva
Instructions to make to make Salatmishchung (Combinación de ensaladas)
- Mise en place

- En una olla vamos a poner a hervir el nopal con agua, 1/2 cebolla y 1 diente de ajo grande. Cuando estén de un color verde militar se retiran. Haremos corte brunoise.



- El tomate se cortará en rodajas (vichy)

- Las acelgas y lechuga, se cortarán en chiffonade.



- La salchicha se cortará en brunoise, al igual que el quesillo.



- Acomodamos todos los ingredientes 🥺
Primera capa tiene lechuga, alrededor es la acelga, sigue tomate con los nopales, después es la salchichacon tomate y unos pepinillo, al final el grano de maíz.

- Para la salsa velouté:

- Prepararemos nuestro roux:
Derretimos la mantequilla, agregamos la harina y mezclamos. Nos quedará un poco como pasta.


- Ya que esté el roux, vamos a ir agregando poco a poco el fondo de ave y mezclamos bien.



- Agregamos sal, nuez moscada y pimienta al gusto, dejamos que en ebullición y se apaga.



- Para salsa alemana..

- A baño María vamos a batir los huevos junto con el jugo de 1/2 limón, aceite de oliva y sal.





- Después que se estén espesando las yemas vamos a poner el perejil y ajo picado.


- Se cuela la salsa velouté mientras la añadimos a las yemas.. y así queda.🥺
- Listo!
